Marinate the Chicken
In a bowl, mix olive oil, garlic, lemon juice, paprika, salt, and pepper. Add the chicken breasts, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Grill the Chicken
Remove chicken from the marinade and place on the grill. Cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).

Prepare the Toppings
While the chicken is grilling, slice the red onion and tomato. Wash and dry the romaine lettuce leaves.

Assemble the Sandwich
Once the chicken is cooked, place a slice of smoked gouda on each piece of chicken and allow it to melt slightly. Toast the brioche buns on the grill for 1-2 minutes. Layer the bottom bun with romaine, a grilled chicken breast with melted gouda, red onion, and tomato. Drizzle with 'peri-naise' sauce and top with the other half of the bun.
