    Marinate the Lamb

    In a bowl, mix the smoked paprika, minced garlic, fennel seeds, ground coriander, salt, and black pepper together. Rub the mixture all over the lamb shoulder, ensuring it is well coated. Drizzle with olive oil and cover. Let marinate in the refrigerator for at least 2 hours, or overnight for best flavor.

    Prepare the Oven

    Preheat your oven to 325°F (165°C) for slow roasting.

    Roast the Lamb

    Place the marinated lamb shoulder in a roasting pan. Cover with foil and roast in the preheated oven for about 3 hours, or until the meat is tender and easily pulls apart.

    Fry the Frites

    During the last 30 minutes of the lamb roasting, heat oil in a deep fryer or large pot to 350°F (175°C). Fry the frites in batches until golden and crispy. Drain on paper towels and season with salt.

    Serve

    Remove the lamb from the oven and let it rest for 15 minutes before slicing. Serve with pickled red onion, pickled carrots, and frites on the side.
