    Make the Bechamel Sauce

    In a saucepan, melt 2 tablespoons of butter over medium heat. Stir in the flour and cook for about 1 minute, stirring constantly. Gradually whisk in the milk, continuing to stir until the mixture thickens. Season with salt, pepper, and nutmeg. Remove from heat and set aside.

    Assemble the Croque Monsieur

    Preheat the oven to 400°F (200°C). Spread Dijon mustard on one side of each slice of bread. On half of the slices, layer ham and a generous amount of Gruyere cheese. Top with another slice of bread, mustard side down.

    Cook the Sandwiches

    In a skillet, melt the remaining 2 tablespoons of butter over medium heat. Place the sandwiches in the skillet and cook until golden brown on one side, about 3-4 minutes. Carefully flip and cook the other side until golden brown.

    Add Bechamel and Cheese

    Transfer the sandwiches to a baking sheet. Spoon the bechamel sauce over the top of each sandwich and sprinkle with the remaining Gruyere cheese.

    Bake

    Bake in the preheated oven for about 10 minutes, or until the cheese is bubbly and golden.

    Prepare the Side Salad

    In a bowl, combine mixed salad greens with olive oil, balsamic vinegar, salt, and pepper. Toss to coat.

    Serve

    Slice the Croque Monsieur sandwiches in half and serve with the side salad.
