    Prepare the béchamel sauce

    In a small saucepan, melt 1 tablespoon of butter over medium heat. Stir in the flour and cook for 1 minute. Gradually whisk in the milk, then add the nutmeg, salt, and pepper. Cook until thickened, about 5 minutes. Remove from heat and stir in half of the Gruyère cheese.

    Assemble the sandwich

    Preheat your oven to 400°F (200°C). Butter one side of each slice of sourdough bread. On the unbuttered side of one slice, layer the ham and the cheese mixture. Place the second slice of bread on top, buttered side facing out.

    Cook the sandwich

    In a skillet over medium heat, cook the sandwich until golden brown on both sides, about 3-4 minutes per side. Remove from skillet and place on a baking sheet.

    Add béchamel and cheese

    Spread the béchamel sauce over the top of the sandwich and sprinkle with the remaining Gruyère cheese. Bake in the oven for about 5-7 minutes, until the cheese is bubbly and golden.

    Fry the egg

    In the same skillet, add a little butter and fry the egg until the white is set and the yolk is cooked to your liking. Season with salt and pepper.

    Top the baked sandwich with the fried egg and serve immediately.
