    Preparation

    Chop all vegetables: red bell pepper, red onion, sweet potato, mushrooms, carrots, and zucchini into bite-sized pieces.

    Sauté Vegetables

    In a large pot, heat 2 tablespoons of oil over medium heat. Add the red onion and sauté for 2-3 minutes until translucent.

    Add Remaining Vegetables

    Add the red bell pepper, sweet potato, carrots, and mushrooms to the pot. Cook for another 5-7 minutes, stirring occasionally.

    Add Coconut Milk and Curry Paste

    Pour in 1 can of coconut milk and 2 tablespoons of red curry paste. Stir until combined.

    Simmer

    Bring the mixture to a boil, then reduce heat to low and let it simmer for 15-20 minutes, or until the sweet potato is tender.

    Add Zoodles and Snow Peas

    In the last 5 minutes of cooking, add the zoodles and snow peas to the pot. Stir well.

    Finish with Cilantro

    Remove from heat and stir in chopped cilantro. Season with salt and pepper to taste.

    Ladle the potage into bowls and enjoy warm.
