Caramelize the Onions
In a large skillet, melt 1 tablespoon of butter over medium heat. Add the sliced onions and sauté until they start to soften, about 5 minutes. Stir in the sherry and thyme, reduce the heat to low, and cook, stirring occasionally, until the onions are caramelized and golden brown, approximately 25-30 minutes. Season with salt and pepper to taste.

Assemble the Sandwiches
Spread the remaining tablespoon of butter on one side of each slice of country bread. On the unbuttered side of two slices, layer the caramelized onions and sprinkle the shredded Gruyere cheese on top. Top with the other slices of bread, buttered side facing out.

Serve
Remove the sandwiches from the skillet, let them cool for a minute, then slice in half and serve warm.
