Curry Preparation

    Prepare the Vegetables

    Start by peeling and chopping the onion, garlic, ginger, carrot, bell pepper, and zucchini into small, uniform pieces.

    Sauté Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, and sauté until translucent, about 5 minutes. Add minced garlic and ginger, and sauté for another 2 minutes until fragrant.

    Cook Vegetables

    Add the chopped carrot, bell pepper, and zucchini to the pot. Stir and cook for about 5-7 minutes until they begin to soften.

    Add Chickpeas and Spices

    Drain and rinse the canned chickpeas. Add them to the pot along with the curry powder, turmeric, red chili flakes, and salt. Stir well to combine.

    Add Coconut Milk and Broth

    Pour in the coconut milk and vegetable broth, stirring to combine all ingredients. Bring the mixture to a gentle simmer.

    Simmer

    Reduce heat to low and let the curry simmer for 15-20 minutes, stirring occasionally, until the vegetables are tender and the flavors meld together.

    Finish with Cilantro

    Chop the fresh cilantro and sprinkle over the curry just before serving.

Rice Preparation

    Rinse the Rice

    In a fine mesh strainer, rinse the basmati rice under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a saucepan, combine the rinsed rice, water, and salt. Bring to a boil over high heat, then reduce to low, cover, and simmer for 15 minutes or until the rice is fluffy and all the water is absorbed.

    Fluff and Serve

    Remove the saucepan from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
