Mousse Preparation

    Melt the Chocolate

    Chop the dark chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let it cool slightly.

    Separate the Eggs

    Carefully separate the egg yolks from the egg whites. Place the egg whites in a clean, dry bowl and the yolks in a separate mixing bowl.

    Whisk Egg Yolks

    Add half of the granulated sugar (50g) to the egg yolks and whisk until the mixture is pale and creamy. Slowly fold in the melted chocolate and vanilla extract until well combined.

    Beat Egg Whites

    Using an electric mixer, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining granulated sugar (50g) and continue to beat until stiff peaks form.

    Combine Mixtures

    Gently fold the beaten egg whites into the chocolate mixture in three batches, being careful not to deflate the egg whites.

    Whip Heavy Cream

    In a separate bowl, whip the heavy cream until it forms soft peaks. Gently fold the whipped cream into the chocolate mixture until fully incorporated.

    Chill the Mousse

    Spoon the mousse mixture into individual serving dishes or a large serving bowl. Cover with plastic wrap and refrigerate for at least 4 hours, or until set.

    Prepare Whipped Cream

    In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, whip the mixture until soft peaks form.

    Serve

    Once the mousse is set, remove it from the refrigerator. Top each serving with a dollop of whipped cream before serving.
