Method

Prepare the Burger Patty

    Cook Quinoa

    Rinse 1 cup of quinoa under cold water. In a saucepan, combine the rinsed quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until all the water is absorbed. Fluff with a fork and let it cool.

    Prepare Flax Egg

    In a small bowl, combine 2 tablespoons of ground flaxseed with 6 tablespoons of water. Stir well and let it sit for about 5 minutes until it thickens.

    Mash Black Beans

    In a large mixing bowl, add 1 cup of canned black beans (drained and rinsed). Use a fork or potato masher to mash the beans until mostly smooth, leaving some chunks for texture.

    Combine Ingredients

    To the mashed black beans, add the cooked quinoa, 1 finely chopped red onion, 2 minced garlic cloves, the prepared flax egg, 1 teaspoon of cumin, 1 teaspoon of smoked paprika, 0.5 teaspoon of salt, and 0.5 teaspoon of black pepper. Mix all ingredients until well combined.

    Form Patties

    Divide the mixture into 4 equal parts and shape each part into a patty. Place the patties on a plate and refrigerate for at least 30 minutes to firm up.

Cook the Patties

    Heat Oil

    In a large skillet, heat 2 tablespoons of olive oil over medium heat.

    Cook Patties

    Once the oil is hot, carefully add the patties to the skillet. Cook for about 5-7 minutes on each side or until they are golden brown and heated through.

Assemble the Burger

    Prepare Buns

    While the patties are cooking, slice the whole grain burger buns in half and toast them if desired.

    Add Toppings

    Spread 0.5 cup of vegan mayonnaise on the bottom half of each bun. Place a lettuce leaf, a slice of tomato, a slice of avocado, and a few pickles on top. Finally, add the cooked patty and close the burger with the top half of the bun.
