Preparing the Prawns

    Season the Prawns

    In a bowl, combine the peeled and deveined large prawns with salt and black pepper. Toss the prawns gently to ensure they are evenly coated with the seasoning. Set aside for about 10 minutes to marinate.

Making the Tempura Batter

    Prepare the Tempura Batter

    In a mixing bowl, sift together the all-purpose flour, cornstarch, and baking powder. In another bowl, whisk the ice-cold water and egg together. Gradually pour the wet mixture into the dry ingredients, stirring gently with chopsticks or a fork. The batter should be lumpy; do not over-mix.

Sweet Chili Dip

    Mix the Dip

    In a small bowl, combine the sweet chili sauce, lime juice, and chopped fresh cilantro. Stir well to combine and set aside for serving.

Frying the Prawns

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). You can test the temperature by dropping a small amount of batter into the oil; it should sizzle and rise to the surface.

    Fry the Prawns

    Dunk each marinated prawn into the tempura batter, ensuring they are coated well. Carefully lower them into the hot oil in batches (do not overcrowd). Fry for about 2-3 minutes or until they are golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.

Serving
