Method

Preparation of the Mousse

  1. 1

    Prepare the Gelatin

In a small bowl, combine the gelatin powder with 2 tablespoons of water. Let it sit for about 5 minutes until it blooms.

  2. 2

    Heat the Gelatin

Place the bowl with the bloomed gelatin over a pot of simmering water (double boiler method) and stir until it completely dissolves. Remove from heat and let it cool slightly.

  3. 3

    Mix Passion Fruit and Sugar

In a separate mixing bowl, combine the passion fruit pulp and granulated sugar. Stir well until the sugar is dissolved.

  4. 4

    Combine the Mixtures

Once the gelatin has cooled slightly, add it to the passion fruit mixture along with the vanilla extract. Mix well until everything is thoroughly combined.

  5. 5

    Whip the Cream

In another bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip.

  6. 6

    Fold Ingredients Together

Gently fold the whipped cream into the passion fruit mixture until fully incorporated. Be careful to maintain the airy texture of the whipped cream.

  7. 7

    Chill the Mousse

Spoon the mousse mixture into individual serving cups or bowls. Cover and refrigerate for at least 2 hours, or until set.

Garnishing the Mousse

  1. 8

    Prepare Garnish

Slice the whole passion fruits in half and scoop out the seeds and pulp. Set aside.

  2. 9

    Add Garnish

Once the mousse is set, remove it from the refrigerator. Top each serving with a spoonful of the fresh passion fruit seeds and pulp. Add a mint leaf on top for decoration.
