Method
Hazelnut Mousse

Prepare Gelatin
Soak the gelatin sheets in cold water for about 5 minutes until soft. Squeeze out excess water.

Whip Cream
In a mixing bowl, whip the heavy cream until soft peaks form.

Fold in Cream
Gently fold the whipped cream into the hazelnut mixture until well combined.
Chocolate Crèmeux

Prepare Gelatin
Soak the gelatin sheet in cold water for about 5 minutes until soft. Squeeze out excess water.

Melt Chocolate
Chop the dark chocolate and melt it in a heatproof bowl set over simmering water (double boiler).

Combine and Thicken
Pour the mixture back into the saucepan and cook over low heat until it thickens enough to coat the back of a spoon. Remove from heat and add melted chocolate and gelatin.
Hazelnut Brownie

Preheat Oven
Preheat your oven to 180°C (350°F). Grease and line a baking dish.

Add Eggs
Add the eggs one at a time, mixing well after each addition.

Combine Dry Ingredients
Sift together flour, cocoa powder, and chopped hazelnuts. Fold into the wet mixture.

Bake Brownie
Pour the batter into the prepared baking dish and bake for 20-25 minutes or until a toothpick comes out clean.
Jelly

Prepare Gelatin
Soak the gelatin sheets in cold water for about 5 minutes until soft. Squeeze out excess water.

Heat Fruit Juice
In a saucepan, gently heat the fruit juice until warm but not boiling.

Combine Gelatin
Remove from heat, add the gelatin to the warm juice, and stir until fully dissolved.

Set Jelly
Pour the mixture into a mold or dish and refrigerate until set, about 2-3 hours.
