Preparing the Chips

Cut the Potatoes
Peel the potatoes and cut them into thick strips, about 1/2 inch wide.

Soak the Potatoes
Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Drain and Dry
Drain the potatoes and pat them dry with a kitchen towel to remove excess moisture.

First Fry
Heat 4 cups of vegetable oil in a deep fryer or large pot to 325°F (163°C). Fry the potato strips in batches for about 5-6 minutes until soft but not browned. Remove and drain on paper towels.

Make the Batter
In a large bowl, combine 1 cup all-purpose flour, 1 cup cornstarch, 1 tsp baking powder, 1 tsp salt, and 1 tsp black pepper. Slowly whisk in 1 cup of cold sparkling water until smooth.

Heat the Oil
In another pot or fryer, heat 4 cups of vegetable oil to 350°F (175°C).

Batter the Fish
Dredge each fish fillet in the remaining flour to coat lightly, then dip it into the batter, allowing excess to drip off.

Fry the Fish
Carefully place the battered fish fillets into the hot oil. Fry for about 5-7 minutes until golden brown and crispy. Remove and drain on paper towels.
Final Fry for Chips

Increase the oil temperature to 375°F (190°C). Fry the pre-cooked potato strips in batches again for about 3-4 minutes until golden brown and crispy. Drain on paper towels and season with salt to taste.
