Crispy Calamari

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Coating
In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder.

Dunk in Buttermilk
Dip each calamari ring into the buttermilk, ensuring they are fully coated.

Coat with Flour Mixture
Transfer the coated calamari to the flour mixture and toss until each piece is well-coated. Shake off excess flour.

Heat the Oil
In a large frying pan or deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings in batches to the hot oil. Fry for about 2-3 minutes or until they turn golden brown and crispy.

Drain and Serve
Remove the fried calamari from the oil and place them on a plate lined with paper towels to absorb excess oil. Serve immediately.
Spicy Aioli

Mix the Ingredients
In a small bowl, combine the mayonnaise, minced garlic, sriracha sauce, lemon juice, and salt.

Whisk Well
Whisk the mixture until smooth and well combined.

Cover the aioli and refrigerate for at least 30 minutes to allow the flavors to meld.
