Preparing the Filling

Cook the Chicken
In a pot, boil the chicken breast in salted water until fully cooked, about 15-20 minutes. Remove from water, let cool, and shred the chicken.

Sauté the Aromatics
In a skillet, heat a tablespoon of oil over medium heat. Add the chopped onion and minced garlic, cooking until soft and fragrant, about 3-4 minutes.

Combine the Filling
In a bowl, mix the shredded chicken, sautéed onions and garlic, cream cheese, chopped parsley, salt, and black pepper until well combined. Set aside.

Prepare the Dough
In a saucepan, melt the butter with the chicken broth and salt over medium heat. Once boiling, gradually add the flour while stirring continuously until it forms a smooth dough. Remove from heat and let cool slightly.
Assembling and Cooking

Shape the Coxinhas
Take a small piece of dough (about the size of a golf ball). Flatten it in your palm and place about 1 tablespoon of filling in the center. Fold and shape into a teardrop, sealing the edges tightly.

In a shallow bowl, beat the eggs. In another bowl, place the breadcrumbs.

Dip each shaped coxinha first in the beaten eggs, then roll in the breadcrumbs to coat evenly.
