Preparation of Pesto
1. Toast Pine Nuts
In a small skillet over medium heat, toast the pine nuts for 3-4 minutes, stirring frequently, until golden brown and fragrant. Remove from heat and let cool.
2. Blend Ingredients
In a food processor, combine the fresh basil leaves, toasted pine nuts, garlic cloves, Parmesan cheese, and salt. Pulse until coarsely chopped.
3. Add Olive Oil
While the food processor is running, slowly drizzle in the olive oil until the mixture is smooth and creamy. Taste and adjust seasoning with black pepper.
Serving
4. Plate the Burrata
Place the burrata cheese on a serving platter. Using a spoon, gently break the outer shell to expose the creamy interior.
5. Add Pesto
Spoon the freshly made pesto generously over the burrata cheese.
6. Garnish
Drizzle a little more olive oil on top if desired and sprinkle with additional black pepper. Serve with crusty bread or crackers.
