Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method), stirring occasionally until melted and smooth. Remove from heat and let cool slightly.

Whisk Eggs and Sugar
In a separate mixing bowl, whisk together the eggs, granulated sugar, and vanilla extract until the mixture is pale and slightly thickened.

Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture, stirring constantly to combine. Be careful not to cook the eggs.

Add Dry Ingredients
Sift together the all-purpose flour and salt. Gently fold the dry ingredients into the chocolate mixture until just combined. Do not overmix.

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about ¾ full.

Bake
Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, or until the edges are set but the center is still soft.

Cool Slightly
Remove the ramekins from the oven and let them cool for 1-2 minutes. This will help the fondants to set slightly before serving.

Serve the Fondants
Carefully run a knife around the edges of each fondant to loosen them. Invert onto a plate to release. Serve immediately with a scoop of vanilla ice cream on top and garnish with fresh berries if desired.
