Method

Cookies

  1. 1

In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy. This should take about 3-4 minutes.

  2. 2

    Add Eggs and Vanilla

Beat in the eggs one at a time, followed by the vanilla extract, mixing well after each addition.

  3. 3

    Combine Dry Ingredients

In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.

  4. 4

    Mix Dry into Wet

Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.

  5. 5

    Chill the Dough

Cover the cookie dough with plastic wrap and refrigerate for at least 30 minutes.

Pancake Batter

  1. 6

    Make the Pancake Batter

In a bowl, whisk together the all-purpose flour, baking powder, sugar, and salt.

  2. 7

    Add Wet Ingredients

In another bowl, whisk together the milk, egg, and vanilla extract until combined.

  3. 8

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be slightly lumpy.

Frying and Coating

  1. 9

    Heat the Oil

In a deep frying pan, heat oil over medium heat until hot but not smoking.

  2. 10

    Dip Cookies in Batter

Take the chilled cookie dough and scoop out portions. Dip each portion into the pancake batter, fully coating the cookie.

  3. 11

    Fry Cookies

Carefully place the batter-coated cookies into the hot oil. Fry for about 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.

Chocolate Coating

  1. 12

    Melt the Chocolate

In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between until completely melted.

  2. 13

    Coat the Cookies

Dip each fried cookie into the melted chocolate, allowing excess to drip off. Place on a parchment-lined baking sheet to set.
