Crust Preparation

Combine Ingredients
In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until well combined.

Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

Bake the Crust
Preheat the oven to 350°F (175°C) and bake the crust for 10 minutes. Remove from the oven and let it cool.
Filling Preparation

Prepare Cream Cheese
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

Add Sugar and Sour Cream
Gradually add the granulated sugar and continue to beat until well blended. Add the sour cream and vanilla extract, mixing until smooth.

Incorporate Eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Avoid overmixing.

Sift in the all-purpose flour and mix on low speed until just incorporated.

Pour Filling into Crust
Pour the cheesecake filling over the cooled crust in the springform pan.
Baking

Bake the Cheesecake
Bake in the preheated oven at 325°F (163°C) for 60-70 minutes, or until the center is set but still slightly jiggly.

Cool and Chill
Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour. Then chill in the refrigerator for at least 4 hours, or overnight.

Before serving, toss fresh berries with powdered sugar in a small bowl to coat.
