Calamari Preparation

    Prepare the Calamari

    Rinse the calamari rings under cold water and pat them dry with paper towels.

    Make the Coating

    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well to ensure even distribution.

    Soak in Buttermilk

    Pour the buttermilk into a separate bowl. Dip each calamari ring into the buttermilk, allowing excess to drip off before coating in the flour mixture.

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown, turning occasionally. Use a slotted spoon to remove them and transfer to a paper towel-lined plate to drain.

Spicy Marinara Sauce

    Sauté Garlic

    In a medium saucepan, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

    Add Tomatoes

    Stir in the crushed tomatoes, red pepper flakes, dried oregano, salt, black pepper, and sugar. Bring to a simmer and cook for about 10 minutes, stirring occasionally.

    Finish the Sauce

    Add the chopped fresh basil and stir well. Let it cook for an additional 2 minutes. Remove from heat and set aside.
