    Prepare the Ingredients

    Rinse the rice under cold water until the water runs clear. Drain and set aside. Rinse and drain the black beans if using canned. Chop the onion, bell pepper, and tomatoes. Mince the garlic cloves.

    In a medium pot, add 4 cups of water and bring to a boil. Add the rinsed rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is cooked and water is absorbed. Fluff with a fork and set aside.

    Cook the Chorizo

    In a large skillet, heat olive oil over medium heat. Add the chopped chorizo and cook until browned and slightly crispy, about 5 minutes. Remove the chorizo from the skillet and set aside.

    In the same skillet, add the chopped onion, bell pepper, and minced garlic. Sauté until the vegetables are soft, about 5-7 minutes.

    Stir in the rinsed black beans, chopped tomatoes, cumin, paprika, salt, and black pepper. Cook for an additional 5-7 minutes until the mixture is heated through and the tomatoes have softened.

    Return the cooked chorizo to the skillet and mix well. Adjust seasoning if necessary. Serve the black bean and chorizo mixture over the cooked rice and garnish with chopped cilantro.
