    Cook the Bacon and Kielbasa

    In a skillet, cook the bacon over medium heat until crispy. Remove and chop into small pieces. In the same skillet, add the diced kielbasa and cook until browned, then set aside.

    Prepare the Collard Greens

    In the same skillet with the bacon grease, sauté the chopped onion until translucent. Add the collard greens and cook until wilted. Set aside to cool.

Mixing the Batter

    Combine Ingredients

    In a large mixing bowl, combine the mashed black beans, all-purpose flour, baking powder, salt, black pepper, and orange zest. Mix until well combined.

    Add Meat and Vegetables

    Fold in the chopped bacon, diced kielbasa, and sautéed collard greens into the bean mixture until evenly distributed.

Cooking the Bean Cakes

    Heat the Oil

    In a deep frying pan, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

    Fry the Bean Cakes

    Using a tablespoon, scoop portions of the batter into the hot oil. Fry for about 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.
