Mousse Preparation

Prepare the Gelatin
In a small bowl, sprinkle gelatin powder over 2 tablespoons of cold water. Let it sit for 5-10 minutes until it blooms.

Mix Açaí and Passion Fruit
In a mixing bowl, combine the açaí puree and passion fruit pulp. Add sugar and mix well until sugar is dissolved.

Whip the Cream
In a separate bowl, whip the heavy cream until soft peaks form.

Combine Gelatin
Melt the bloomed gelatin in the microwave for about 10-15 seconds until liquid. Allow to cool slightly before adding it to the açaí mixture.

Fold in Cream
Gently fold the whipped cream into the açaí mixture until fully combined. Stir in vanilla extract.

Chill
Transfer the mousse to serving cups and refrigerate for at least 2 hours or until set.
Jelly Preparation

Prepare the Gelatin
In a small bowl, sprinkle gelatin powder over 1 tablespoon of cold water and let it sit for 5-10 minutes to bloom.

Combine Gelatin
Remove from heat and stir in the bloomed gelatin until fully dissolved. Let cool slightly.

Set the Jelly
Pour the jelly mixture over the set mousse in the serving cups. Refrigerate for another hour until the jelly is firm.
Blondie Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish.

Mix Wet Ingredients
In a mixing bowl, melt the butter and mix with brown sugar and granulated sugar until smooth. Add eggs one at a time, followed by vanilla extract.

Combine Dry Ingredients
In another bowl, whisk together flour, baking powder, and salt.

Combine Mixtures
Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Bake
Pour the blondie batter into the prepared baking dish and smooth the top. Bake for 20-25 minutes or until a toothpick comes out clean.

Allow the blondies to cool in the pan for about 10 minutes before transferring to a wire rack. Once cool, cut into squares.
