Method
Pork Belly Preparation

Prepare the Pork Belly
Preheat the oven to 300°F (150°C). Score the skin of the pork belly in a crisscross pattern, ensuring not to cut into the meat. Rub the pork belly with salt, pepper, and garlic powder, and drizzle with olive oil.

Cook the Pork Belly
Place the pork belly in a roasting pan and cook in the preheated oven for about 2.5 to 3 hours, or until the meat is tender and the skin is crispy. Increase the oven temperature to 450°F (230°C) for the last 30 minutes to achieve a crispy skin.

Rest the Pork Belly
Remove the pork belly from the oven and let it rest for 15 minutes before slicing into slider-sized pieces.
Red Cabbage Slaw Preparation

Prepare the Slaw
While the pork belly is cooking, finely shred the red cabbage and grate the carrot. Chop the green onions.

Mix the Slaw
In a large bowl, combine the shredded cabbage, grated carrot, and chopped green onions. In a small bowl, whisk together the rice vinegar, mayonnaise, salt, and pepper. Pour the dressing over the slaw and toss to combine. Refrigerate until ready to serve.
Pepper Jelly Glaze Preparation

Make the Glaze
In a small saucepan, combine the pepper jelly and apple cider vinegar. Heat over low heat until the jelly melts and the mixture is smooth. Remove from heat and set aside.
Fried Shallots Preparation

Prepare the Shallots
Thinly slice the shallots and toss them in flour to coat.

Fry the Shallots
In a deep frying pan, heat the oil over medium heat. Fry the coated shallots in batches until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Assembly

Assemble the Sliders
Slice the brioche buns in half. On the bottom half of each bun, place a piece of crispy pork belly, followed by a generous spoonful of red cabbage slaw, a drizzle of pepper jelly glaze, and a sprinkle of fried shallots. Top with the other half of the bun.
