Method

Prepare Salad Base

  1. 1

    Wash and Dry Greens

Thoroughly wash the organic mixed baby greens under cold running water. Spin them dry using a salad spinner or pat them dry with paper towels.

  2. 2

    Shave Brussels Sprouts

Using a sharp knife or a mandoline, shave the Brussels sprouts into thin slices. Place them in a large mixing bowl.

  3. 3

    Grate Carrots

Peel the carrots and grate them using a box grater or food processor. Add the grated carrots to the mixing bowl with the Brussels sprouts.

Combine Flavor Enhancements

  1. 4

    Add Za'atar and Preserved Lemons

Sprinkle the za'atar and the chopped preserved lemons over the mixture in the bowl. Toss gently to combine all ingredients.

  2. 5

    Toast Pine Nuts

In a small skillet over medium heat, toast the pine nuts until golden brown, about 3-5 minutes. Keep an eye on them to prevent burning. Once toasted, add to the salad mix.

Prepare Dressing

  1. 6

    Mix Dressing Ingredients

In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper until well combined.

Assemble Salad

  1. 7

    Combine Everything

Drizzle the dressing over the salad mixture and toss gently until all ingredients are evenly coated. Adjust seasoning if necessary.

  2. 8

    Serve

Serve the Cocha Salad immediately on individual plates or in a large serving bowl. Enjoy your fresh and vibrant salad!
