Prepare Sushi Rice

Cook the Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions.

Season the Rice
Once cooked, transfer the rice to a large bowl. In a small saucepan, combine rice vinegar, sugar, and salt over low heat until dissolved. Gently fold the vinegar mixture into the rice, being careful not to mash the grains.

Cool the Rice
Allow the seasoned rice to cool to room temperature, covering it with a damp cloth to prevent it from drying out.
Prepare Wagyu A5

Slice the Beef
Thinly slice the Wagyu A5 beef against the grain into bite-sized pieces.
Assemble Nigiri

Form the Nigiri
Moisten your hands with water to prevent sticking. Take a small portion of sushi rice (about 2 tablespoons) and form it into an oval shape. Place a slice of Wagyu A5 on top of the rice.

Serve
Arrange the nigiri on a plate and serve with soy sauce, wasabi, and pickled ginger on the side.
