1. Prepare the Miso Shoyu Reduction
In a small saucepan, combine miso paste, soy sauce, mirin, and rice vinegar. Heat over low heat, stirring until the mixture is smooth and slightly thickened. Set aside.
2. Prepare the Avocado
Cut the avocado in half, remove the pit, and scoop out the flesh. Slice the avocado into thin strips.
3. Prepare the A5 Wagyu
Slice the A5 Wagyu beef into thin strips, about 1-2 inches wide. Season with salt and pepper to taste.
4. Assemble the Rolls
On a clean surface, lay out a strip of Wagyu beef. Place a few slices of avocado on top and sprinkle with sesame seeds. Roll the beef around the avocado tightly.
5. Finishing Touches
Sear the rolls in a hot skillet for about 1-2 minutes on each side until the beef is browned but still rare inside. Remove from heat.
6. Serve
Slice the Wagyu rolls into bite-sized pieces. Drizzle the miso shoyu reduction over the rolls and garnish with chopped green onions before serving.
