Method
Prepare the Rice
Rinse the Rice
Rinse the sushi rice under cold water until the water runs clear. Drain well.
Cook the Rice
Cook the rice according to the package instructions, usually 1 cup of rice to 1.2 cups of water.
Season the Rice
Once cooked, transfer the rice to a large bowl. Mix rice vinegar, sugar, and salt in a separate bowl until dissolved, then gently fold it into the rice while fanning it to cool.
Assemble the Nigiri
Form the Rice
Wet your hands with water to prevent sticking. Take a small amount of the seasoned rice (about 1 tablespoon) and shape it into an oval.
Add the Topping
Place a piece of amaebi on top of the rice. Optionally, add a small dab of wasabi underneath the shrimp.
Serve
Serve immediately with soy sauce on the side for dipping.
