Method
Prepare Sushi Rice
Rinse the Rice
Rinse sushi rice under cold water until the water runs clear. This removes excess starch.
Cook the Rice
In a rice cooker or pot, combine rinsed rice and water. Cook according to rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.
Prepare Scallops
Assemble Nigiri
Form Rice Balls
Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and form it into an oval shape.
Top with Scallops
Place a slice of the seared scallop on top of the rice ball. Repeat for remaining scallops.
Serve
Arrange the scallop nigiri on a plate. Serve with soy sauce, wasabi, and pickled ginger on the side.
