Sablefish Preparation

Marinate the Sablefish
In a bowl, combine salt, sugar, and miso paste. Rub this mixture over the sablefish fillets and let them marinate for at least 30 minutes.

Cook the Sablefish
Preheat your broiler. Place the marinated sablefish on a baking sheet and broil for 8-10 minutes, or until cooked through and slightly charred on top. Let it cool, then slice into thin pieces.

Make Miso Mayo
In a small bowl, mix together mayonnaise and miso paste until well combined. Set aside.

Prepare Sushi Rice
Cook sushi rice according to package instructions. Once cooked, let it cool slightly.

Assemble the Oshi
In a sushi mold or a small rectangular dish, layer sushi rice, followed by a layer of sliced sablefish, and a drizzle of miso mayo. Repeat layers until all ingredients are used. Press firmly to compact.

Finish and Serve
Unmold the pressed sablefish, slice into pieces, and arrange on a plate. Garnish with shiso leaves and drizzle sweet soy sauce over the top before serving.
