Method

Prepare Sushi Rice

    Rinse the Rice

    Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    Combine the rinsed rice and water in a rice cooker or pot. Cook according to rice cooker instructions or bring to a boil, cover, and simmer for 18-20 minutes.

    Season the Rice

    In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until the sugar dissolves. Once the rice is cooked, transfer to a bowl and gently fold in the vinegar mixture. Allow to cool to room temperature.

Prepare Octopus

    Boil the Octopus

    In a large pot, bring 4 cups of water and 1 tsp of salt to a boil. Add the octopus and reduce to a simmer. Cook for about 30-40 minutes or until tender.

    Cool and Slice

    Remove the octopus from the pot and let it cool. Once cool, slice into thin pieces for nigiri.

Assemble Nigiri

    Form the Rice

    Wet your hands and take a small amount of sushi rice (about 2 tablespoons) to shape into an oval mound.

    Top with Octopus

    Place a slice of the prepared octopus on top of the rice mound.

    Serve

    Serve the octopus nigiri with wasabi, soy sauce, and pickled ginger on the side.
