Prepare the Sablefish

Marinate the Fish
In a bowl, mix miso paste, mirin, soy sauce, and brown sugar. Coat the sablefish fillets with the marinade and let them marinate in the refrigerator for at least 30 minutes.

Broil the Fish
Preheat the broiler. Place the marinated sablefish on a baking sheet lined with foil. Broil for about 8-10 minutes, or until the fish is cooked through and caramelized on top.
Prepare the Pickled Shiitakes

Rehydrate Mushrooms
Soak the dried shiitake mushrooms in warm water for about 30 minutes until rehydrated. Remove and slice.

Pickle Mushrooms
In a saucepan, combine rice vinegar, sugar, and salt over medium heat. Stir until sugar dissolves. Add the sliced shiitake mushrooms and let them pickle for at least 20 minutes.
Prepare the Mushroom-Dashi Broth

Season the Broth
Add soy sauce and mirin to the broth and stir to combine. Taste and adjust seasoning as needed.
Serve

Plate the Dish
In a bowl, ladle the mushroom-dashi broth. Place the broiled sablefish on top and garnish with pickled shiitakes. Serve hot.
