Prepare Sushi Rice

Rinse the Rice
Rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a rice cooker or pot, combine the rinsed rice and water. Cook according to the rice cooker instructions or bring to a boil, then cover and simmer for 20 minutes.

Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently mix in the vinegar mixture. Let it cool to room temperature.
Assemble Nigiri

Form the Rice
Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 1.5 tablespoons) and form it into an oval shape.

Add the Madai
Place a slice of madai on top of the rice mound. Optionally, add a small amount of wasabi between the rice and the fish.

Serve
Serve the nigiri with soy sauce on the side for dipping.
