Prepare Sushi Rice

Cook the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions or using a rice cooker, typically with a 1:1 ratio of rice to water.

Season the Rice
Once cooked, let the rice cool slightly and mix in rice vinegar, sugar, and salt to taste.
Prepare Yuzu-Soy Reduction

Combine Ingredients
In a small saucepan, combine soy sauce and yuzu juice. Bring to a gentle simmer over low heat.

Reduce
Allow the mixture to reduce slightly until it thickens (about 10 minutes). Remove from heat and let cool.
Assemble the Rolls

Prepare the Fillings
Slice the avocado and king salmon into thin strips.

Roll the Sushi
Lay a nori sheet on a bamboo sushi mat. Spread a thin layer of sushi rice over the nori, leaving a small border at the top. Place the crab meat, avocado slices, and salmon strips in the center. Sprinkle with tobiko.

Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure. Seal the edge with a little water. Use a sharp knife to slice the roll into bite-sized pieces.
