Making the Gnocchi

Prepare the Dough
In a mixing bowl, combine ricotta cheese, flour, egg, lemon zest, and salt. Mix until a soft dough forms.

Shape the Gnocchi
On a floured surface, roll the dough into long ropes and cut into 1-inch pieces. Use a fork to create ridges.

Cook the Gnocchi
Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove and set aside.
Cooking the Vegetable Medley

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add sliced leeks and sauté until softened, about 5 minutes. Add sweet corn and butternut squash, cooking until tender. Season with salt and pepper.
Cooking the Salmon

Cook the Salmon
Cook salmon for about 4-5 minutes on each side or until cooked through. Serve with lemon wedges.
Assembly

Combine and Serve
On a plate, place a serving of the vegetable medley, top with gnocchi, and finish with a piece of salmon. Garnish with lemon wedges.
