Prepare Sushi Rice

    Rinse the Rice

    Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    Combine the rinsed rice and water in a rice cooker or pot. Cook according to the rice cooker instructions, or bring to a boil, then cover and simmer for 20 minutes until the water is absorbed.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.

Prepare Nigiri

    Slice the Hamachi

    Using a sharp knife, slice the hamachi into thin pieces, about 1/4 inch thick.

    Form the Rice

    Wet your hands to prevent sticking, and take a small amount of sushi rice (about 1.5 tablespoons). Shape it into a small oval.

    Assemble the Nigiri

    Place a slice of hamachi on top of the shaped rice. Gently press down to adhere. Repeat with remaining rice and hamachi.

    Serve

    Arrange the nigiri on a plate and serve with soy sauce, wasabi, and pickled ginger on the side.
