Method

Brioche Preparation

  1. 1

    Activate the Yeast

In a small bowl, combine warm milk and sugar. Sprinkle yeast over the top and let it sit for about 5-10 minutes until frothy.

  2. 2

    Mix the Dough

In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture, melted butter, and eggs. Mix until a dough forms.

  3. 3

    Knead the Dough

Turn the dough out onto a lightly floured surface and knead for about 10 minutes until smooth and elastic.

  4. 4

    First Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.

  5. 5

    Shape the Loaf

Punch down the risen dough and shape it into a loaf. Place it in a greased loaf pan.

  6. 6

    Second Rise

Cover the loaf with a cloth and let it rise again for about 30-45 minutes.

  7. 7

    Bake the Bread

Preheat the oven to 350°F (175°C). Bake the brioche for 30-35 minutes or until golden brown and sounds hollow when tapped.

Whipped Butter Preparation

  1. 8

    Make the Whipped Butter

In a mixing bowl, beat the unsalted butter with a hand mixer until fluffy. Add sea salt to taste and mix until well combined.

Serving

  1. 9

    Serve the Brioche

Slice the brioche bread and serve it warm with whipped butter, capers, and thinly sliced red onion on the side.
