Preparation of Calamari

Prepare the Calamari
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Toss the calamari rings in the mixture until well-coated.

Fry the Calamari
In a deep skillet or fryer, heat the vegetable oil to 350°F (175°C). Fry the calamari rings in batches until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels.
Preparation of Buttermilk Aioli

Make the Aioli
In a medium bowl, whisk together the mayonnaise, buttermilk, minced garlic, chopped cilantro, and lemon juice. Season with salt and black pepper to taste. Mix until smooth and well-blended.

Serve the Dish
Serve the crispy calamari hot with the buttermilk aioli on the side for dipping. Garnish with additional chopped cilantro and chopped serrano chili if desired.
