Preparation

    Prep the Potatoes

    Boil the baby potatoes in salted water until tender, about 15-20 minutes. Drain and set aside.

    Blanch the Broccolini

    In the same pot of boiling water, blanch the broccolini for 2-3 minutes. Drain and immediately place in ice water to stop cooking.

    Make the Salsa Verde

    In a bowl, combine chopped parsley, capers, minced garlic, lemon juice, olive oil, salt, and black pepper. Mix well and set aside.

    Prep the Fish

    Preheat the grill or oven to 400°F (200°C). Clean the branzino and drizzle with olive oil, salt, and black pepper.

Cooking

    Cook the Fish

    Place the branzino on the grill or in a baking dish and cook for 20-25 minutes, turning halfway through, until the flesh is opaque and flakes easily.

    Sauté the Broccolini

    In a pan, heat olive oil over medium heat and sauté the blanched broccolini for 3-4 minutes. Season with salt.

    Serve

    On a plate, arrange the grilled branzino, sautéed broccolini, and boiled baby potatoes. Drizzle with salsa verde and serve with lemon wedges.
