Caramelize the Onions
In a large skillet, heat the olive oil over medium heat. Add the chopped onions and a pinch of salt. Cook, stirring occasionally, for about 20-25 minutes until the onions are golden brown and caramelized.

Add Sugar and Spices
Once the onions are caramelized, add the brown sugar, garlic powder, black pepper, dried thyme, and dried oregano. Stir well and cook for an additional 2-3 minutes.

Blend the Sauce
Remove the skillet from heat and let the mixture cool slightly. Transfer the mixture to a blender, add the mayonnaise and apple cider vinegar, and blend until smooth.

Pour the sauce into a clean, airtight bottle or jar. Refrigerate for at least 1 hour before serving to allow the flavors to meld.
