Brine the Chicken
Soak the chicken breast in pickle brine for at least 1 hour, or overnight for best flavor.

Prepare the Battering Station
In a bowl, combine buttermilk, flour, cornstarch, salt, black pepper, and cayenne pepper to create the batter.

Heat the Oil
In a deep skillet or fryer, heat oil to 350°F (175°C).

Batter and Fry the Chicken
Remove the chicken from the brine, dip it into the buttermilk batter, making sure it's fully coated. Carefully place in the hot oil and fry for about 5-7 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
Toast the seeded bun lightly. Place the fried chicken on the bottom half of the bun, add dill pickle slices and drizzle with hot sauce. Top with the other half of the bun.
