    Prepare the Potatoes

    Wash and peel the Russet potatoes, then cut them into thin strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot or deep fryer, heat the canola oil to 350°F (175°C). Use a thermometer for accuracy.

    Fry the Potatoes

    Carefully add a handful of soaked and drained potato strips to the hot oil. Fry in batches for about 5-7 minutes or until golden brown and crispy.

    Drain and Season

    Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, season with salt and black pepper to taste.

    Serve

    Serve the fries hot as a delicious side dish or snack.
