Prepare the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form an even layer.

Bake the Crust
Bake the crust in the preheated oven for 8-10 minutes, or until lightly golden. Remove from the oven and let cool.

Prepare the Filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in the sugar, sour cream, and vanilla extract, mixing until well combined.

Add Eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

Bake the Cheesecake
Pour the filling into the cooled crust. Bake at 325°F (160°C) for 55-60 minutes, or until the center is set but still slightly jiggly.

Cool and Chill
Turn off the oven, crack the oven door, and let the cheesecake cool for 1 hour. Then refrigerate for at least 4 hours, preferably overnight before serving.
