Combine Ingredients
In a medium saucepan, combine the whole milk, heavy cream, granulated sugar, vanilla extract, and a pinch of salt. Heat over medium heat, stirring occasionally, until the sugar has dissolved and the mixture is hot but not boiling.

Add Flavoring
Remove the saucepan from heat and add your chosen flavoring (such as fruit puree or chocolate). Stir until combined.

Chill the Mixture
Allow the mixture to cool to room temperature, then refrigerate for at least 2 hours or until completely chilled.

Churn the Gelato/Sorbet
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Freeze
Transfer the gelato or sorbet to an airtight container and freeze for at least 4 hours to firm up before serving.
