Instructions for Grilled Shrimp Panang Curry

    Prepare the Rice

    Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice with 1.5 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit for another 5 minutes before fluffing with a fork.

    Marinate the Shrimp

    In a bowl, combine the shrimp, olive oil, lime juice, minced garlic, salt, and black pepper. Let it marinate for at least 15 minutes.

    Skewer the Shrimp

    Thread the marinated shrimp onto skewers. Preheat a grill or grill pan over medium-high heat. Grill the shrimp for about 2-3 minutes on each side, or until they are opaque and cooked through.

    Prepare the Curry

    In a saucepan over medium heat, add the Panang curry paste and sauté for about 1 minute until fragrant. Pour in the coconut milk and stir to combine. Add the sliced bell peppers and zucchini, and let simmer for about 10 minutes until the vegetables are tender.

    Serve

    Serve the grilled shrimp skewers over a bed of jasmine rice, topped with the Panang curry and vegetables. Garnish with fresh cilantro.
