Place the chicken breasts in a bowl and cover with buttermilk. Let marinate in the refrigerator for at least 1 hour or overnight for best results.

Prepare the Coating
In a large bowl, mix together flour, cornstarch, Nashville hot spice mix, salt, black pepper, and cayenne pepper.

Heat Oil
In a deep skillet or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Chicken
Remove the chicken from the buttermilk and allow excess to drip off. Dredge each piece in the flour mixture, ensuring it is well coated.

Fry the Chicken
Carefully place the coated chicken in the hot oil. Fry each piece for about 5-7 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

On the bottom half of the toasted brioche bun, layer lettuce, fried chicken, pepper jack cheese, hot honey, tomato slices, pickles, and then top with the other half of the bun.
