Prepare the Steak
In a small bowl, combine cumin, chili powder, garlic powder, salt, and black pepper. Rub the mixture onto the flank steak. Heat olive oil in a grill pan over medium-high heat. Grill the steak for about 6-8 minutes on each side or until desired doneness. Let it rest for 5 minutes before slicing it thinly against the grain.

Melt the Cheeses
In a saucepan over low heat, combine queso blanco and half of the shredded Colby Jack cheese. Stir until melted and smooth. Remove from heat.

Assemble the Nachos
On a large baking sheet, spread the tortilla chips evenly. Top with the melted cheese mixture, sliced flank steak, remaining Colby Jack cheese, guacamole, pico de gallo, and dollops of lime crema and salsa.

Bake
Preheat the oven to 350°F (175°C). Bake the assembled nachos for about 10-15 minutes, or until the cheese is bubbly and the nachos are heated through.

Remove from the oven and serve immediately, garnished with additional pico de gallo and lime crema if desired.
