Bistro Chips Preparation

    Wash and peel the Russet potatoes. Slice them thinly (about 1/8 inch thick) using a mandoline or a sharp knife.

    Place the sliced potatoes in a large bowl of cold water and let them soak for about 30 minutes. This helps to remove excess starch and ensures crispiness.

    Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.

    Drain the soaked potato slices and pat them dry with a clean kitchen towel. In a large bowl, toss the potato slices with olive oil, sea salt, chopped rosemary, garlic powder, and black pepper until evenly coated.
