For the Chocolate Drizzle

Method

Instructions

  1. 1

Preheat the oven to 350°F (175°C). In a bowl, combine crushed butter cookies, melted butter, and sugar. Mix well until combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.

  2. 2

    Make the Cheesecake Filling

In a large mixing bowl, beat the cream cheese with an electric mixer until smooth. Add sugar and vanilla, mixing until combined. Add the mashed bananas and mix well. Add eggs one at a time, mixing after each addition. Finally, fold in the sour cream until smooth.

  3. 3

    Combine and Bake

Pour the cheesecake filling over the cooled cookie crust. Bake in the preheated oven for 45-50 minutes or until the center is set and only slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour.

  4. 4

    Chill and Prepare Chocolate Drizzle

After the cheesecake has cooled, refrigerate for at least 4 hours or overnight. For the chocolate drizzle, melt the chocolate chips and heavy cream together in a microwave or double boiler until smooth, stirring frequently.

  5. 5

    Serve

Once the cheesecake is chilled, remove it from the springform pan. Drizzle the melted chocolate over the top, slice, and serve cold.
