Prepare the Chicken
Rub the chicken breasts with olive oil, ancho chili powder, salt, and black pepper. Grill the chicken over medium heat until cooked through, about 6-7 minutes per side.

Cook the Bacon
In the same skillet, cook the pecanwood smoked bacon until crispy. Remove and drain on paper towels.

Assemble the Sandwich
On one slice of toasted sourdough, layer the grilled chicken, sautéed chiles, bacon, sliced tomatoes, pepper jack cheese, and cheddar cheese. Spread chipotle aioli on another slice of bread and place it on top.

Melt the Cheese
Return the assembled sandwich to the skillet and cook over low heat, pressing down slightly, until the cheese melts and the bread is golden brown on both sides, about 3-4 minutes per side.

Remove from heat, slice the sandwich in half, and serve hot.
